One of Portugal's strongest cheeses; it contains pure sheep's milk, salt and animal rennet.
It is left to ripen in the middle of rye straw for a minimum of 180 days. The amount of salt added and the time it is left to ripen bestow this cheese a very intense flavour. It should be served at the end of a meal with wine or coffee.
