The "Knowledge of Tradition", present in the Lourenço family for several generations now, combines the knowledge acquired over several decades with the new Technologies in the manufacture of quality cheese. The use of natural products such as the thistle - of plant origin - for the production of creamy sheep's cheese, and the rennet - of animal origin - for the production of the remaining cheeses, contribute to maintain the tradition unchanged throughout the manufacturing process until the final result.

All milk used in the manufacture of our cheeses is mechanically collected and chilled at the dairy barn, Herdade da Urgueira and Herdade da Coutada de Baixo, as well as at other neighboring farms, to avoid the lost of any of its characteristics. After the chilling process of the milk, it is taken to the cheese factory where the manufacturing process starts in compliance with all the rules of hygiene and quality control.

Our goal is to guarantee to the consumer the excellence of our products manufactured in compliance with the most advanced standards of hygiene and quality, always keeping the flavor of old times through the use of traditional craft techniques preserved in the family over decades.
